Course Overview
Train to be a chef with the Certificate IV in Commercial Cookery [SIT40516]. Our 18 month course combines practical hands-on kitchen skills with how to successfully manage a kitchen
You will learn all the hands-on skills required to serve the role of a Chef & also how to manage your kitchen team, design menus & also cost menus too. All of our trainers are trained chefs & will show you the tricks of the trade & bring in their experience to our kitchens and classrooms.
Our classes prepare you for working in a commercial kitchen & replicate what that is like. You will be preparing up to 8 dishes per practical class with varying difficulty levels covering a wide range of menu items across all service periods and includes areas such as Meat, Poultry, Seafood, Dietary Requirements & Desserts.

Duration and Study Load

Delivery
To receive this qualification you must complete 33 units 26 core units and 7 elective units.
Students attend college 20 hours per week over 2-3 days.
The course comprises of 6 stages, each comprising 10 weeks, with holidays in between. The first 4 stages are completed in the Certificate III. Stage 5 and 6 each comprise of 10 weeks, with holidays in between.
Entry Requirements
Completion of Certificate III in Commercial Cookery recommended.
Work Placement
As part of the course, students are required to complete 48 occasions of Work-based Training. The College will assist you in finding a suitable venue for you to complete your WBT.
Recognition of Prior Learning
You may be able to shorten the length of your chosen course by measuring skills acquired through work, life experiences or qualifications obtained from formal studies or training. AQF qualifications and statements of attainment issued by another registered training organisation will be recognised by Acknowledge Education.
